Topping for the cinnamon coconut muffins

I posted a cinnamon coconut muffin on here from Mel's kitchen cafe. I've slightly changed it up. 

Coconut crumb topping for the cinnamon coconut muffins:

1 T butter, cold
1 T flour
1 t cinnamon
6 T granulated sugar 
1/8-1/4 shredded coconut (depending on how much you want) 

I added in a zucchini shredded and squeezed out the water. 
(Had some I needed to get rid of) it made a nice change to regular zucchini bread. Coconut and zucchini go great together!! Yummy!

Honey coconut granola

Recipe adapted from Mel's coconut granola

1 1/2c old fashioned oats
1/2 c chopped almonds
1/2 c chopped cashews
1/2c shredded coconut
3 T brown sugar
2 T coconut oil
2 T honey
1/4 tsp salt 
1/2 c raisins or Crasins 

Preheat 250*
Toss oats, nuts, coconut & brown sugar together. 
In a small bowl melt the oil & honey together. Stir in the salt. 
Pour over oat mixture. Toss well & coat everything.
Pour & spread onto a cookie sheet that's covered with parchment!! 
Bake for 45 min stirring half way through. Bake until golden brown. 
Keep an eye on it. The honey will turn it brown quick. 
Let cool on tray. Scoop into a bowl. Break up any big clumps, toss in dried fruit. 

Yummy!!

Coconut cinnamon muffins

Coconut cinnamon muffins from Mel's kitchen cafe! So amazing!!!!

  • 2 large eggs
  • 1 cup canned coconut milk (light or regular)
  • 2 teaspoons vanilla extract
  • 6 tablespoons coconut oil, melted
  • 1 1/4 cups white whole wheat flour
  • 1 cup unbleached all-purpose flour
  • 2 teaspoons baking powder
  • 3/4 teaspoon salt
  • 1/2 cup plus 2 tablespoons sugar
  • Cinnamon and sugar for dusting

  1. Preheat the oven to 350 degrees and lightly grease a 12-cup muffin tin with nonstick cooking spray (or you can line them with paper liners).
  2. In a medium bowl, whisk together the eggs, milk, vanilla and coconut oil.
  3. In a large bowl, whisk together the whole wheat flour, all-purpose flour, baking powder, salt and sugar. Make a well in the center of the dry ingredients and pour in the wet ingredients.
  4. Using a wooden spoon or rubber spatula, stir the batter together until just combined. Don't overmix or the muffins will be tough and dry. It only takes a few stirs to incorporate the batter well enough. The batter will be lumpy and that is ok.
  5. Divide the batter evenly among the prepared muffin tin. Sprinkle lightly with cinnamon and sugar.
  6. Bake for 16-20 minutes until a toothpick inserted into the center of a muffin comes out dry or with a few moist crumbs. Don't overbake.

Ham and Egg Crepes

We actually had these for dinner one night, not breakfast. They are so so yummy and simple, so I thought that I would share. 
•1 cup flour
• 1 tablespoon sugar
• 1/4 teaspoon salt
• 1 1/2 cups milk
• 4 large eggs
• 3 tablespoons melted butter
• 9 thin slices ham
• 9 eggs
• chopped fresh parsley
1. Combine flour, sugar, salt, milk, four eggs and the melted butter in a blender and blend on high for 30 seconds. Let rest for 15 minutes.
2. Heat a 12 inch non-stick skillet over medium heat and lightly coat with butter. Add 1/3 cup batter and swirl to completely cover skillet. Cook until underside of crepe is very lightly starting to brown, about 2 minutes.
3. Loosen edge of crepe with spatula and then either using large spatula or your fingers, lift it up and flip it over. Cook another minutes and then slide out of skillet onto wax paper. Repeat until all crepes are done. You should have about 9 when you are done.
4. Preheat oven to 350. Place crepes on a rimmed baking sheet (you can fit 3-4 per sheet). Place ham slice in center of crepe and carefully crack egg onto ham. Fold edges of crepe toward center, using the egg white as a kind of glue. Season with salt and pepper and bake until egg white is set, about 10-12 minutes. Sprinkle with chopped parsley and serve at once.

Lemon Poppy seed pancakes

2 cups unbleached ap (all-purpose) flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/3 cup sugar
pinch of salt
1/3 cup poppy seeds
zest of 4 lemons
2 cups buttermilk
2 large eggs, lightly beaten
2 tablespoons butter, melted

butter, to serve (and for pan)

To make the pancakes combine the flour, sugar, baking powder, baking soda, salt in a large bowl. In another bowl the buttermilk, eggs, butter, lemon zest and poppy seeds. Add the wet to the dry. Stir all the ingredients until they are just combined. Don't worry if the batter is a bit lumpy, you don't want to over mix.

Potato waffles

These are very yum especially when you want some potatoes with your breakfast and you're already using the waffle iron.

3 Potatoes, grated
1/2 onion, grated
1 egg
1/8-1/4 c sour cream
Salt
Pepper
Garlic

Spread grated potatoes on a few layered paper towels, sprinkle liberally with salt and let the water drain out for a few minutes. (or wring potatoes out with a kitchen towel) Once potatoes are dry mix together with other ingredients. Season according to taste.
Spread out enough to fill your waffle iron. Lock iron and cook potatoes for 10-12 minutes until potatoes are cooked and golden brown.

Breakfast Frittata

Anyone seen the movie Morning Glory. Harrison Ford's character has a big part in it about Frittatas. He goes on and on about how you can use anything in your refrigerator. He's right. Look what I did.



Left over dinner Fajita mixins:
Onions
Peppers
Meat, diced
Eggs
Cheese
Potato, grated and washed


We had fajita's for dinner. Onions, peppers, steak, and chicken. Obviously you see we had leftovers. In the morning I took out the random bits of meat and veggies and sauteed them up with a potato that I grated and washed. Right there you could have some awesome hash browns. We on the other hand added Eggs beaten with a splash of milk. Pour it on top and let the eggs set a bit. The top will still have some raw egg so throw on some grated cheese and put it in your broiler until it's all cooked up. Enjoy with Salsa or Ketchup! Yum!

You could do this with anything. I know mom sure hates onions and peppers. Add in some spinach, or tomatoes. Maybe your husband is a bacon lover. Or the kids only like Ham and cheese.
Whatever makes your omelet happy in the morning will make a tastey frittata.

Nikki's Hearty Pancakes

3/4 cup flour (you can use whole wheat or white)
1/3 cup oatmeal
1 Tbs sugar
1 tsp baking powder
1/4 tsp baking soda
1/4 tsp salt
1 egg beaten
1 cup buttermilk
2 Tbs oil
1/4 cup walnuts
If the batter is a little runny, I will add some more flour, until its the consistency that I desire.

Chocolate Chips Dutch Baby

1/4 cup semi sweet chocolate chips
1/4 cup brown sugar
1/2 cup flour
2 eggs
1/2 cup half n' half
dash cinnamon
3 tbs butter

small bowl, combine chocolate chips and sugar. set aside.
Beat flour, eggs, cream, and cinnamon until smooth.
Place butter in 9'' pie plate. Heat oven 425º for 4-6 minutes or until melted. Pour batter into hot pie plate. Sprinkle with sugar chocolate mixture. Bake for 15-20 minutes or until edges are golden brown.
Serve with butter, or syrup if desired.

Pumpkin Pancakes

Pumpkin Pancakes

Whisk together:

1 ¼ c. all-purpose flour

2 TBSP sugar

2 tsp baking powder

½ tsp each cinnamon, ground ginger and salt

1/8 tsp nutmeg

Pinch of ground cloves

In a separate bowl, stir together:

1 c. milk

6 TBSP canned pumpkin puree

2 TBSP melted butter

1 egg

Fold wet mixture into dry ingredients.

Melt some butter in a skillet over medium heat; pour ¼ cup batter for each pancake. Cook pancakes about 3 min per side; serve with butter and syrup, makes 8-10.

Buttermilk Variation:

1 tsp baking powder

¼ tsp baking soda

1 cup buttermilk

(mix in to make very thick pancakes! Let batter “sit” for a few minutes after mixing, before cooking.)

Vanilla Syrup

1 c. whipping cream

1 c. sugar

½ c. butter (1 cube)

2 tsp. vanilla

Combine all ingredients. Cook on low heat until butter is melted and sugar dissolved. DO NOT BOIL!!

Cream Cheese Coffee Cake

2-1/4 cups flour
3/4 cup sugar
3/4 cup butter
1/2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
3/4 cup sour cream
1 egg -beaten-
1-1/2 tsp. almond extract

Filling:

1 pkg cream cheese
1/2 cup sugar
1 egg
1/2 cup raspberry jam
1/2 cup slivered almonds

In a large mixing bowl, combine flour and sugar. Cut in butter until mixture is crumbly. Remove 1 cup and set aside.
To remaining crumbs, add baking powder, baking soda, and salt. Add the sour cream, egg, and almond extract, white chocolate chips; mix well.

Spread in the bottom and 2 in'. up the side of a greased 9-in' springform pan.

For the filling , in a small bowl, beat cream cheese, sugar, and egg until blended. Pour over batter; spoon raspberry jam on top. Sprinkle with almonds and reserved crumbs.

Bake at 350 degree for 55-60 minutes. Let stand for 15 minutes. Carefully run a knife around the edge of pan to loosen; remove sides from pan.

*Change the flavor by changing jams!
*The crust is really dry in order to change that we've updated the recipe by adding white chocolate chips to the crust. VERY DELICIOUS!

Orange Waffles/Pancakes - w/ Buttermilk syrup

- 6 eggs
-1/2 teaspoon salt
-6 oz. can of orange juice concentrate, thawed (i've used regular o.j. as well)
-1/2 cup butter, melted
-1/4 cup sugar
-3 3/4 cup flour
-3 cup milk

-In one bowl beat egg whites until stiff peaks form. In separate bowl mix, egg yolks, salt, orange juice, butter, and sugar. Beat until smooth. Alternate adding flour and milk. Fold egg whites into batter. Bake in waffle iron. Serves 5.

This actually makes a lot and I always have tons left over. I also will make them into pancakes on my skillet, which my family likes better. They are so yummy. We love them. Here is a butter milk syrup recipe in case you don't have one. (We also have eaten them with fruit/powdered sugar and regular maple syrup. Both yummy options. )

-1 1/2 cups white sugar
-3/4 cup buttermilk
-1/2 cup butter
-2 Tablespoons corn syrup
-1 teaspoon baking soda
-2 teaspoons vanilla extract

in sauce pan, stir together sugar, buttermilk, butter, corn syrup, and baking soda. bring to boil, and cook for 7 minutes. Remove from heat, and stir in vanilla.

I recommend making this in a large sauce pan, cause if it spills over-it SUCKS to clean up. :)

12 oz raspberry juice
2 scoops raspberry sherbet
1 cup raspberries
2/3 cup bananas
Ice

Cranberry Splash:
12 oz cranberry juice
2 scoops raspberry sherbet
1/2 cup strawberries
1 cup raspberries
Ice

Pineapple Squeeze:
12 oz pineapple juice
1 scoop pineapple sherbet
1 scoop nonfat frozen yogurt
1 cup bananas
Ice

Ocean Sunrise:
12 oz raspberry juice
2 scoops orange sherbet
1 cup strawberries
2/3 cup bananas
Ice

Mango Mango:
12 oz passion fruit juice
2 scoops pineapple sherbet
1 1/2 cups mango
Ice

Just Peachy:
12 oz peach juice
2 scoops nonfat frozen yogurt
1 1/2 cups peaches

Strawbanna:
12 oz apple juice

Chocolate Pancakes

I got this from a new cookbook I have, and we had them this morning. We thought they were good to have for a variety, but not something we'd want every morning. It comes is a syrup recipe, but we just had ours with fruit and fruit syrup. We considered powdered sugar next time too. So if any of your decide to try these with the syrup, let us know how it went.

CHOCOLATE PANCAKES:
1 1/2 C. Flour
3 tsp baking powder
1/2 salt
6 Tbsp sugar
6 Tbsp baking cocoa 
1 1/4 C. Warmed milk
4 Tbsp butter or margarine, melted
2 eggs, beaten

SYRUP:
2 C sugar
1 8-0z can evaporated milk
1 Tbsp butter

Pancakes:
-Mix and sift together dry ingredients. Add milk, butter, eggs and beat until smooth. Add extra milk if the batter is too thick. Cook like regular pancakes.

Syrup: 
-Boil sugar and milk, stirring constantly until sugar is dissolved. Cook over heat until mixture starts to boil. Do not leave unattended, it comes to quick boil. remove from heat and add butter. Let sit 5 minutes, then stir and enjoy.

Stuffed French Toast

I got this recipe off a Bed and Breakfast website (bbonline.com) It has wonderful breakfast ideas!

1 loaf of day old french bread - Sliced thick. Make a pocket in the side.
6-8 oz. cream cheese mixed with a few TB. of favorite jam
Smear about a tsp. of the cream cheese into the pocket and set aside.

6 eggs
1/2 c. milk or cream
1/4 c. pancake mix
1 tsp. vanilla
1 tsp. cinnamon
Mix well - cook slowly.
Serve with fruit sauce or syrup.

Family's Favorite Granola

8 c. Old-Fashioned Oats
1 2/ c. Brown Sugar
1 1/2 c. Wheat Germ
8 oz. Coconut
1 1/2 c. Sunflower Seeds - We like Honey Roasted
1/2 c. Canola Oil
3/4 c. Honey
2 tsp. Vanilla
Cinnamon - optional
Mix oats, wheat germ, coconut, and sunflower seeds together. Heat oil, and honey together until bubbly. Remover from heat, add vanilla, and stir into oat mixture.
Grease 2 large cookies sheets and spread 1/2 of mix onto each pan. Sprinkle with cinnamon, mix gently and level in pan. Bake 325º for 20 minutes, stirring once halfway through. If you prefer it chunky let the granola cool in pan then break up and store in gallon-sized plastic bags.Dried fruit may be added at the end.
